How I'm Refreshing My Diet This Spring With Splendid Spoon
Wow, that was the longest, yet fastest winter ever! When 2021 rolled around I was pumped and ready to smash all my healthy resolutions. And it was going so well until 4 weeks in, I cracked and fell hard! Working from home and prepping and cooking all that grilled chicken and vegetables was too much.

It felt great knowing my weekly meals were ready when I needed them - no planning, prepping, or cooking but still nutritious meals at my fingertips. One stressful task ticked off for the week.
First up was the Banana Flax Smoothie. I was so surprised to see how much protein it contained, and each ingredient had a health benefit I never even know about. The bananas are packed full of potassium to regulate blood pressure, the flax seeds help keep liver function in tip-top shape and they add vegan probiotics that maintain gut integrity for optimal health. And that was just breakfast.
Lunchtime rolled around and it was time for my Green Goddess Quinoa Bowl, and yes it looked as good as sounded and tasted delicious too. But the meal of the day was dinner, the Vegan Meatballs in Marinara Sauce were *chefs-kiss* amazing. The spinach, full of iron and folic acid, and the pumpkin seed delivering heart-healthy magnesium, were nourishing my body while the vegan meatballs, noodles, and sauce satisfied my taste buds. Thanks to my reset plan I had a light bowl of Parsnip Apple Puree to end my day, which was like having a healthy apple pie for dessert.
The next four days of Splendid Spoons smoothies, soups, and bowls were just as delicious and wholesome, and so were the next three weeks.
